Summer in Texas is HOT. Turning on the oven guarantees boost in temperature in our apartment, so some nights, we eat raw, fresh food to stay cool. This salad makes a tasty main dish, or a great side dish for a BBQ.
Soft, velvety peaches, crunchy, nutty almonds, and salty cheese make for a winning combination. The mildly sweet yogurt dressing is the icing on the cake! It is a perfect recipe for staying cool and healthy on a hot summer night.
- 4 cups of spinach*
- 1 peach*, pit removed and thinly sliced
- 1/8 cup chopped, toasted almonds
- 2 Tbsp shredded white cheddar cheese*, or flakes of parmesan cheese
- 1/4 cup yogurt dressing (see recipe below)
Dressing Ingredients (makes about 3/4 cup dressing)
- 1/2 cup plain full-fat yogurt*
- 1 tsp lemon juice*
- 1 Tbsp honey*
- 1/4 cup milk*
- 3/4 tsp poppy seeds
*Creative Green Living recommends purchasing these ingredients as organic where available to avoid GMOs, pervasive pesticides and/or questionable farming practices.

- Place 2 cups of spinach on each plate.

1. In a small jar, combine yogurt, lemon juice, honey and milk. Stir vigorously until the
ingredients are combined. Add poppyseed, and stir until just incorporated.
