{Recipe} Peach and Spinach Salad with Poppy Seed Yogurt Dressing

Summer in Texas is HOT.  Turning on the oven guarantees boost in temperature in our apartment, so some nights, we eat raw, fresh food to stay cool.  This salad makes a tasty main dish, or a great side dish for a BBQ.  

Soft, velvety peaches, crunchy, nutty almonds, and salty cheese make for a winning combination. The mildly sweet yogurt dressing is the icing on the cake!  It is a perfect recipe for staying cool and healthy on a hot summer night.  


Salad Ingredients
  • 4 cups of spinach*
  • 1 peach*, pit removed and thinly sliced
  • 1/8 cup chopped, toasted almonds
  • 2 Tbsp shredded white cheddar cheese*, or flakes of parmesan cheese
  • 1/4 cup yogurt dressing (see recipe below)
Dressing Ingredients (makes about 3/4 cup dressing)
  • 1/2 cup plain full-fat yogurt*
  • 1 tsp lemon juice*
  • 1 Tbsp honey*
  • 1/4 cup milk*
  • 3/4 tsp poppy seeds
*Creative Green Living recommends purchasing these ingredients as organic where available to avoid GMOs, pervasive pesticides and/or questionable farming practices.

  1. Place 2 cups of spinach on each plate. 
  2. Top with peaches, almonds and cheese
  3. Top with yogurt dressing 
Yogurt Dressing:  

      1. In a small jar, combine yogurt, lemon juice, honey and milk.  Stir vigorously until the 
          ingredients are combined.  Add poppyseed, and stir until just incorporated.
