The Best Keto Cloud Bread Recipe -- No Cream Cheese Required!

This easy keto cloud bread recipe is made without cream of tartar or cream cheese

This very simple low-carb cloud bread recipe is high-protein, low-calorie, gluten-free and almost carb free. 

It is made with only 3 ingredients (eggs, full fat cottage cheese and white vinegar) and the only thing you will need is a hand mixer and 2 bowls.

Bread has been such an important part of mankind’s feeding habits for so long, no wonder why people love this particular food so much.

In fact, according to my friend Google, recent studies show that bread baking would have started
somewhere around 30,000 years ago.

I for one can hardly go one day without having a slice of bread.

So, what happens when you can’t have bread anymore, how do you beat the cravings?

Fortunately, we humans are very clever and adaptable, so some people following the low-carb
movement quickly found ways to enjoy their favorite foods without those pesky carbs, and that includes bread.

One of the most popular low-carb bread recipes right now is Cloud Bread, also called oopsie bread.

The keto/low-carb crowd loves this recipe very much, and for good reason: It is very healthy, low-calorie, grain-free, protein-rich, made with very few ingredients, and relatively easy to make with the right technique.

Essentially, cloud bread is always made with the same three basic ingredients: 
  • Eggs
  • some form of soft cheese
  • an acidic substance (usually cream of tartar) or a raising agent. 

The rest of the ingredients you see in any cloud bread recipe is simply to add a twist/flavor.

Why an acidic substance? Well, it turns out that adding some form of acid to the egg whites will make sure they stay as fluffy (or cloudy?) as possible. In other words, it acts as a stabilizer.

I wanted to keep this recipe very simple, so I replaced cream of tartar with something that is found in
practically every pantry: White vinegar.

What is cream of tartar? 

Cream of tartar is a crystallized by-product of wine fermentation, it is one of the main ingredients of baking powder, and it is essentially an acid.

How do you replace cream of tartar in a recipe?

Simple: Use another form of acid.

Searching the web, I quickly learned that cream of tartar can be replaced by double the amount of
white vinegar -- so that's what I did here!

  • 4 large eggs*
  • 1/3 cup full creamed cottage cheese* (you could also use quark, sour cream or thick yogurt)
  • 1 tsp white vinegar

How to Make Cloud Bread Step 1: 

The first step to this recipe is to separate the egg yolks from the egg whites and then place them into
two separate mixing bowls.

You will then beat the cheese with the egg yolks for about 2 minutes, until very smooth.

The next step is to pour the vinegar into the egg whites in a second bowl and to beat this mixture until it develops stiff peaks.

PRO TIP: Wash your hand mixer attachments to avoid contaminating your egg whites with the yolk mixture. Make sure you do a final rinse in cold water -- if your bowl or beaters are warm, the egg whites won't set up.

How to Make Cloud Bread Step 4: 

Next, carefully fold your newly made meringue into the yolk mixture, while trying to deflate the
meringue as little as possible. (This is important, as the cloud bread will not inflate while baking.)

When this is done, carefully scoop about eight portions of the foamy mixture onto 2 large baking pans lined with parchment paper.

You can use a 1/3 cup measuring cup to do this.

Using a spoon you will carefully spread the mixture in 3-4 inch wide circles, leaving some space
between each piece. Each piece should be between ½ inch to 1 inch thick.

Lastly, bake for around 25 minutes at 350F, or until a toothpick inserted in the center of the pieces

Wait a few minutes then place the cloud bread pieces on a cooling rack.

Once cool, use them as a bread base for different recipes or enjoy them as a snack on their own.

If you are new to cloud bread, you might have some questions about the process to make cloud bread. Here are some easy answers!

Why is my Cloud Bread Runny or Flat?

Some common reasons the cloud bread could turn out flat:
  • The mixture was stirred too aggressively when adding the yolks to the whipped egg whites.
  • The egg whites were not whipped for long enough.
  • The bowl you were mixing the egg whites in got contaminated with egg yolk or other fat.
  • The bowl or beaters were warm (this can happen if you washed them right before using them).

Regarding the egg whites, if you don’t whip the meringue long enough, it will be too liquid.

And, of course, any time you beat egg whites, it's important to start with a clean, cold or lukewarm bowl. A hot or dirty bowl will kill your egg white mix.

Can you toast cloud bread?

Absolutely! If you want to warm your cloud bread up a bit, or give it a bit of a tasty crunch, you can lightly toast it before using it.

Can you make cloud bread without cream cheese?

For sure!

Lots of cloud bread recipes use softened cream cheese, but my recipe uses creamed cottage cheese instead.

Can you make cloud bread in the microwave?

While some keto bread recipes work well in the microwave, this is one that really turns out best if you bake it in the oven.

How long does cloud bread keep?

Cloud bread will keep for up to five days when stored in an airtight container in the refrigerator - but good luck making it that long!

How do you make cloud bread paleo?

If you are avoiding dairy, you can use mayonnaise like My PCOS Kitchen does. 

Is cloud bread the same thing as bulletproof bread?

Cloud bread is similar to bulletproof bread but it's not quite the same.

Cloud bread uses egg yolks and (usually) a dairy as the fat to make the bready chemical reaction. 

Bulletproof bread (like the one from the Bulletproof blog) is dairy free and uses collagen instead.

How many carbs are in cloud bread?

This recipe has less than one carb per piece of bread (assuming you make 8).

Is cloud bread gluten free?

Yes - this recipe is! 

Just like any recipe, its status as gluten free is only as good as the ingredients that you use.

Is this a carb free cloud bread recipe?

It depends how picky you are with counting your carbs. This recipe has a scant .4 grams of carbs - meaning you can have two pieces for less than a full carb! 

If you eat the whole pan, though, you definitely want to make sure you count all 3.2 grams of carbs.
