One Pan Chicken and Asparagus Skillet Dinner

This easy asparagus and cheese stuffed chicken recipe is gluten free and keto. You only need one pan to make this easy low carb cast iron skillet chicken bake that you finish in the oven. For extra flavor, top with Italian cheese like Parmesean.

  • 4 ROXY™ Organic Chicken Breasts from Draper Valley
  • 2 slices provolone cheese, cut in half
  • 12-16 stalks of asparagus, bottom 2 inches cut off
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 tsp dry thyme leaves
  • 2 Tbsp butter
  • 1 onion, chopped
  • 1/2 cup shredded Italian cheese blend
  • Fresh thyme sprigs for garnish if desired

Easy Skillet Asparagus-Stuffed Chicken Recipe Step 1:

Use a sharp knife to cut each chicken breast sideways, about 75% of the way through to create a pocket.

Lay half a slice of provolone and 3-4 stalks of asparagus inside the pocket of each chicken breast.

  1. Preheat the oven to 380 F (190 C)
  2. Use a sharp knife to cut each chicken breast sideways, about 75% of the way through to create a pocket.

  4. Mix the salt, pepper and thyme together in a small bowl.
  5. Drizzle each side of the chicken breast with extra virgin olive oil and sprinkle with the herb mixture.
  6. Heat cast iron skillet on medium heat for 5 minutes. Melt 2 Tbsp butter in the skillet and add the chopped onion and sauté for 3-4 minutes until fragrant.
  7. Add the chicken breasts on top of the onions and cook for about 4 minutes before flipping over.
  8. Cook on the other side for 4 minutes before topping with shredded Italian cheese blend.
  9. Move the skillet to the preheated oven for 10-15 minutes or until a thermometer inserted in the thickest part of the thickest chicken breast reads 165 degrees F (74 C).
