Tuna Salad Stuffed Avocados


Are you looking for a healthy, protein-packed lunch recipe? These tuna stuffed avocado cups will not disappoint! This recipe is simple and delicious - and it's Whole 30 compatible to boot. That's a win all around!

To make these tuna cups, I was inspired by the flavors of a pico do gallo Mexican salsa - lime, salt, cilantro, onion. While the tuna salad is good on it's own, the avocado is REALLY what makes this recipe sing - so don't leave it out!


Ingredients

  • 1 can Wild Selections solid white albacore tuna packed in water, drained
  • 2 Tbsp mayonnaise*
  • 2 tsp lime juice, divided
  • 1/4 red bell pepper*, diced
  • 1 green onion, chopped
  • 3 sprigs fresh cilantro*, leaves chopped
  • 5 shakes hot sauce like Tabasco
  • 1 dash ground cumin (or to taste)
  • Salt and pepper to taste
  • 1 avocado
*Creative Green Living recommends purchasing these ingredients as organic where available to avoid GMOs, pervasive pesticides and/or questionable farming practices.

Yield: 1 Serving




Directions

STEP 1: Tuna Salad

To make the tuna salad, combine the tuna, mayonnaise, 1 tsp lime juice, bell pepper, green onion, cilantro and hot sauce in a medium sized bowl. Add a dash each of cumin, salt and pepper. Taste and add more spices and hot sauce as desired.

STEP 2: Avocado Shells

Cut avocado in half and discard the pit. Brush inside of avocado flesh with lime juice. Sprinkle with a dash of salt.

STEP 3: Stuff

Stuff avocado halves with tuna salad and serve.
