Something about the combination of sweet strawberries and fresh mint just mingle together in a way that is crisp - yet slightly sweet - in a way that is oh-so-refreshing!

We grow a mint plant mostly so I have a ready supply of fresh mint available for infused water! If you don't have your own mint plant, that's okay! Just pick up a small pack of organic mint in the produce aisle of your local grocery store or at your local farmers market.

One of the things people use as an excuse to prevent them from deciding to jump in and start a Whole 30 or paleo lifestyle is this:
"I just can't drink black coffee."

Good news friends! Not only do you NOT have to drink black coffee but you can actually have very good, very tasty coffee on both Whole 30 and paleo! No joke. Now, you may need to do coffee a little differently than you've done it before but the truth is that I'm actually enjoying my new coffee routine more than when I was over sweetening it with sugar.

Think of it less like how to sweeten coffee without sugar and more like how to enhance the coffee to make it taste awesome and help you power through your day!

Whole 30 & Paleo coffee tip #1: Start with good coffee

So this might seem obvious - but the number of people drinking bad coffee in this country is astonishing so maybe it isn't. If you are buying cheap, poor quality coffee, what you end up with in your cup will not taste amazing. Period. There are no miracles in coffee. If they cut corners in production you can taste it.

If you've been buying cheap super market coffee like Maxwell House and Folgers, consider expanding your coffee horizons. Find a small, local roaster if you can as the attention they pay to the quality of their coffee is usually quite high (look at your local farmer's market or on Craig's List). No one available? My favorite coffees available from big stores include Starbucks' Caffe Verona Coffee which has rich cocoa tones as well as World Market Vanilla Bean Coffee.

how to make roasted red pepper soup - gluten free and whole 30 compliant

This roasted red pepper soup is one of the finest soups that I have created in a while. There is a rich, warm, almost sweet flavor from the roasted peppers and carrots, that is nicely balanced by the drizzle of olive oil and sprinkle of salty parmesan.  It is delicious. 

This soup is gluten free and has an option to make it paleo, vegan AND Whole 30 compliant - this makes the soup perfect for just about everyone. So bring it to your potluck or as a side dish for family dinner and everyone will be able to enjoy it!

Last week, I wrote about how to easily make your own roasted red peppers, so if you are feeling ambitious, you can make your own roasted peppers to put in this soup.  If you are not up to that, just buy yourself a nice jar of roasted red peppers.  It might not be as satisfying as making your own, but they will work just fine.  

This recipe will help you stick to your New Year's healthy eating resolutions, while still delivering a delicious flavor.

A few days ago, I bought some gorgeous vine ripened tomatoes. They smelled fabulous, and looked beautiful, so I took them home and made some super flavorful lime and cilantro salsa!  I can't stop eating it!  Really, it is SO delicious! 

You'll love this fresh, salsa, too - especially if you've been growing tomatoes at home or picking them up at your local farmer's market. For a fun twist, try making this with different colored tomatoes.

Last summer, my family spent seven weeks in France.  While we were there, we ate a number of meals from farmer's markets that lined the rivers.  They had wonderful, fresh produce that we thoroughly enjoyed, but the most delicious thing we ate from the markets were the strawberries.  They were so ripe, juicy and definitely the best strawberries I have ever tasted.  

My parents came over for a visit while we were there, and my mom commented that she had never had a strawberry that was so red all the way through.  They were heaven on earth.  

Due to the way large growing operations grow, manage and pick strawberries, you probably won't find such fresh and luscious strawberries at your local large chain grocery store. Instead, head to your local farmer's market, farm or produce stand to find the ripest, juiciest berries this summer.

Regardless of where you shop for berries, here are my best tips for choosing the most delicious, juicy strawberries, and storing them so they stay fresh as long as possible.

One of my favorite things about summertime is the food.  Particularly the vegetables.  My fridge is constantly filled with tomatoes, summer squash, zucchini and bell peppers.  I just love how fresh dinner is with a bowlful of vegetables.  I have dozens of veggie combinations that I love in the summer, but one of my favorites is ratatouille.  

After the Pixar movie came out, I wanted to try my hand at it, and made a gorgeous dish of it in college.  Several years later, I went back to find the recipe, but couldn't locate it, so I had to put together one of my own.  This version of ratatouille has a silky smooth vegetable sauce with juicy squash, slightly crunchy onions and is full of flavor.

Portobello Pepper Steak


Steak-less Pepper Steak?! Don't worry. This pepper "steak" is a wonderful stand-in for your meatless nights (hello Meatless Monday!). You honestly don't miss the meat when you have mushrooms as a stand-in (so savory, so satisfying!). And the addition of cauliflower rice is not only absolutely scrumptious, it's also an easy way to pack more veggies into your day. Is this as good as take-out? I think it's even better!

This recipe was inspired by this Coconut Carrot soup recipe which appears on My Wife Makes. It is warm and creamy and spiced without being too spicy. It's a great way to use leftover shredded chicken but stands well on its own without the chicken if you don't happen to have any in your fridge. It's also a fabulous source of vitamin a - you get more than 150% of your recommended daily value in just one bowl!

We are working on a second round of Whole 30 and some mornings are just so crazy busy it's all I can do to make some scrambled eggs. These muffins are super easy to make and are freezable. Just pop them in the microwave to warm them up and top with some guacamole. Of course everything is better when served with a side of bacon - and these are no exception! If you're not doing Whole 30 or if you're on a modified Paleo diet, these would also be delicious with a sprinkling of cheddar and some sour cream.
