Healthy Fruit & Veggie Gummies Recipe

I met my friend, Danielle, from Busy Mom's Helper when I attended the SNAP! conference in Utah last April. She writes about all things domestic - crafts, decorating ideas, recipes and more. 

I've never made fruit gummies myself but these look absolutely delightful! I love that they include fresh fruits and juices - and I know exactly what is going into them. No weird food coloring or GMO sweeteners I wouldn't want to feed my family. I can't wait to try them myself.
~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ 


  • 3 cups Strawberries*, washed & stems cut off
  • 2 cups Carrot Juice*
  • 1/2 cup Lemon Juice
  • 3/4 cup Orange Juice
  • 2 cups Mango Chunks
  • 1 cup Unflavored Gelatin
  • 1/2 cup Honey or Agave (sweetener)
  • 2 tsp. Vanilla Extract
  • 2 tbsp. Protein Powder, if desired
*Creative Green Living recommends purchasing organic options for these ingredients to avoid persistent pesticides


  1. In a blender, puree the strawberries, 1 cup carrot juice and the lemon juice. Pour into a pot. 
  2. Sprinkle 1/2 cup of the gelatin on the top. Allow to absorb for about 3 minutes, then whisk in. Heat over medium heat (do not allow it to boil) until mixture goes from thick to runny and isn't grainy. Remove from heat. Add 1/4 cup honey, 1 tsp. vanilla and 1 tbsp. protein powder and stir until well-combined. 
  3. Pour into sprayed baking sheet. Refrigerate 2-3 hours, or until set up
  4. In a blender, puree 1 cup orange juice, the rest of the carrot juice and mango chunks. Pour into a pot. REPEAT STEP 2.
  5. Pour over strawberry gummy layer (once it has set up in the fridge). Refrigerate 2-3 hours, or until set up
Note: I sliced some extra strawberries and placed them randomly on top of the strawberry layer once it was set up, before pouring the mango mixture on top.
