{Recipe} Sweet Beet Smoothie (another sneaky way to get your kids to eat vegetables!)

I get asked all the time about how to get kids to eat more fruits and vegetables. One way that I find rather effective - especially for the very-veggie-averse - is to sneak them into desserts or smoothies. Prepared the right way, the kids will have no idea there are vegetables in their delicious treats. Bwa ha ha!

This smoothie makes a great breakfast or can be packed for lunch. "Smoothies for lunch?!" You say? Indeed! With an insulated thermos like a Kleen Kanteen insulated stainless steel bottle (my personal favorite), your smoothie will stay cold, thick and icy until lunch time. Honestly!

This recipe was modified oh-so-slightly from Safeway's O Organics Sweet Beet Smoothie Recipe. I added some greek yogurt for a boost of protein and sticking power as well as lemon juice and frozen cherries to sweeten it up and cover they taste of the beets that some kids do not love. Taste it before you serve it and if you think it needs more sweetness, add a bit of O Organics agave syrup and give it another whirl in the blender.


  • 1 cup coconut water
  • 1 cup fresh pineapple chunks
  • 1/2 O Organics fresh beet (the pre-peeled, pre-steamed ones will blend easier than a raw one)
  • 1 handful of O Organics spinach leaves
  • 1/2 teaspoon zest of an O Organics lemon
  • 2 teaspoons fresh lemon juice (from your O Organics lemon)
  • 1 cup frozen O Organics cherries
  • 1/2 cup O Organics vanilla greek yogurt
  • O Organics Agave Syrup (optional - to taste)
Makes 4 servings


  1. Blend all ingredients well except agave syrup. Be sure to let the blender run until there are no tell tale chunks of beet or spinach left - this is the secret to sneaking veggies into smoothies! Taste and add agave as needed to sweeten.
  2. Add ice and pulse until it's your desired consistency. Drink right away or pack into an insulated thermos bottle to drink at lunch time!
Using an insulated thermos like the Klean Kanteen insulated containers, you can pack smoothies for lunch - and they will stay cold!
