Gourmet Peach, Onion and Balsamic Pizza

Pizza is practically a member of our family.  We eat it almost every week, and I can't imagine life without it!  We generally eat vegetarian food at home, so I have been trying all kinds of ways to make vegetarian pizza more interesting and delicious.

This one is such a fun and beautiful pizza!  It is flavorful, seasonal and has a fabulous little kick from the balsamic dressing!  Plus, peach season is beginning, so it will be a perfect way to use up those gorgeous ripe peaches!

Have at it!  Your tongue and stomach will love you!

Roll out your pizza dough on a silicone mat that has been sprinkled with cornmeal or semolina flour.


Evenly spread the caramelized onions on top of the rolled out dough.


Place thin slices of peach on top of the onions.


Sprinkle the feta over the peaches and onions.


Preheat your oven to 450°F


Cook the pizza for 8-10 minutes.


While the pizza is cooking, make your balsamic reduction.


When the pizza comes out of the oven, let it cool for 2 minutes, then drizzle the warm reduction over the top of the pizza and serve immediately.  Serves 4.
